Boneless Pork Loin Roast or Fresh Ham

Ingredients:

One 5lb Boneless Pork Roast
Salt and Pepper
Mustard
2 Cloves Garlic Diced
1/2 Medium Onion, Sliced
1 Beef or Chicken Bouillon Cube
Red Wine
Flour

Instructions:

Preheat oven to 450 degrees F. Cut small punctures into pork with small knife and insert pieces of diced garlic into the meat. Rub with mustard and then with salt and pepper.

Place pork in a roasting pan and add celery and onion on top of and around the meat. Add water to the pan (approximately 1/2") and add bouillon cube.

Turn oven down to 350 degrees F and place meat into oven, cook approximately 1-1/2 hours, basting every 20 minutes. After first 40 minutes in the oven; add a splash of red wine over meat, and continue basting and add water when needed (don't let pan burn).

Remove meat from pan when done. Use the flour to thicken the gravy (keep liquid hot in roasting pan to avoid lumping) as needed.
