Rosemary Garlic Leg of Lamb

Ingredients:

1 American Lamb Leg (Flavor of US Lamb is far better then that of New Zealand or Australian)
1 tblspn Olive Oil
1 tspn Crushed Rosemary
3 to 5 Fresh Garlic Cloves; quartered (quantity depends on taste and size of lamb leg)
Dash Salt and White Pepper; optional

Instructions:

Heat oven to 500 degrees F while preparing lamb. Be sure to turn temp down to 350 degrees F before placing lamb in oven.

With small kitchen (paring) knife cut slits 1/2" to 3/4" deep in lamb leg, approximately 4" apart. Insert Garlic in each slit.

Rub the oil over all surface areas of lamb leg.

Sprinkle with crushed rosemary, and salt and pepper if desired.

Place in a 350 degree F oven for 15 to 30 minutes per lb. depending on your preference of wellness. Medium (pink) is best
